I haven't seen a lot of her movies, but from what I have seen I'd say either Professor McGonagall in Harry Potter or Violet Crawley in Downton Abbey. But I just added The Prime of Miss Jean Brodie to my Netflix queue so that may take top billing, especially if it's anything like To Sir With Love.
The Countess of Trentham in "Gosford Park," which she bases her role in Downton Abbey. She was also pretty sweet as Thetis in the original "Clash of the Titans."
