-All Along the Watchtower, Hendrix -It's All Over Now Baby Blue, Richie Havens and also the Them version (with Van Morrison) -Lay Lady Lay, Magnet -Heart of Mine, Norah Jones
Wait, this isn't a list of Dylan covers? Okay, here's a non-Dylan one.
I take back my earlier entry in favor of My Morning Jacket's cover of Erykah Badu's "Tyrone." Jim James singing about reaching into his purse gives me chills every time.
I loved The Cardigans' obsession with covering Black Sabbath/Ozzy songs. Their versions or "Iron Man," "Sabbath, Bloody Sabbath," and "Mr. Crowley" are all classic.
Mad love for Hallelujah. Also, on the Jeff Buckley tip, Jamie Cullum does a very cool, jazzy version of "Lover, You Should Have Come Over" Franz Ferdinand's cover of "What You Waitin' For" by Gwen Travis's cover of "Baby, One More Time" (it's just funny) Love Annie Lennox's "Waiting In Vain" Johnny Cash's "Hurt", and "Redemption Song" with Joe Strummer And I can't believe someone else digs Cake's "I Will Survive" as much as I do. That song kills.

"It's My Life" by No Doubt. Hands down. LOVE the music video
Fugees--No Woman, No Cry. I'll throw Wyclef's Guantanamera in too.
There's a great Flaming Lips cover of borderline. Jose Gonzales does fantastic covers too.
I'd like to think of more but I'm too excited b/c my captcha is WINGS.
Beth - you reminded me of Fugees Killing Me Softly. Fantastic cover of Roberta Flack.
"She Said She Said" by Gov't Mule.
Flaming Lips played "Borderline" at the Green Apple Festival this year. It was pretty amazing.
Who's Loving You by the Jackson 5
Hallelujah by Jeff Buckley
Sea of Love by Cat Power
Me and Bobby McGee by Janis Joplin
Proud Mary by Tina Turner
iron & wine doing 'waitin' for superman' by flaming lips. one of my recent cover obsessions.
and me, doing this mix that's in my car.
I agree with Cate on these two:
Hallelujah by Jeff Buckley
Sea of Love by Cat Power
And I'm going to add these two:
Against All Odds by Postal Service
I Fell in Love with a Boy by Joss Stone
Good call on the Hallelujah.

leslie, we're no longer friends. joss stoned RUINED that great white stripes song. i'm embarassed for you.
Damn, Beenu beat me to saying Jeff Buckley's Hallelujah. That song sounds like it was written just for him to sing.
Ani DiFranco's cover of When You Were Mine is really good, too. And Brother Ali has an amazing cover of Grandma's Hands - I've only head it live tho.

MMJ also does a mean "Rocket Man."
Every song on the Medusa album by Annie Lennox.
I'll also add Hazy Shade of Winter by the Bangles.
yes! ani difranco's version of when you were mine is AMAZING! esp the bootleg live version i have w/ her and maceo parker.

Add votes for Hallelujah and It's My Life.
Also find the Seether remake of Careless Whisper interesting.
Best cover of a song: Joe Cocker's version of "Little Help from my Friends"
I love Annie Lennox's cover of Bob Marley's "Waiting in Vain"
Mine is simple... "I Will Survive" by CAKE. Why? Because sometimes us boys have to own that sh*t. You women crush us as much as we crush you.
Late to the party!
Mad love for Hallelujah.
